The Audacity Manual is the official source from the creators of Audacity. Espceially helpful sections include the tutorial in five parts and the information about exporting completed projects in MP3 format.

Exporting your recording to MP3

In most cases, you'll want your digital recording to play on a portable music player, or you'll want to put the recording onto the web. MP3 is a popular format for storing music and other audio files; most browsers and players support MP3 files. After you've used Audacity to create your file, you must export the file so that it plays in MP3 format. To do this, you need to download a program called an encoder and you'll need to tell Audacity where the encoder is stored on your computer.
